Sorry mate, been busy, but here goes.
Assigning tracks.
On the home screen.
Press the assign button.
Press the 'select' button above the fader of the track you want to record to.
Then press the 'source' button of whichever input you want to go to that track.
So setting input 'H' to track...
Reaper, best bang for buck going, in my limited experience.
Sorry, but I see studio one free as completely useless. As you said, it doesn't work with VSTs, but it doesn't come bundled with an EQ!!!! How can you mix with no EQ?

Bare in mind I'm new to this myself but I did notice the same thing that Schwarzenyaeger pointed out. There is a little imbalance in the backing vocals in places. I also noticed the drums seemed a lot louder when there was no other instruments playing and the kick was getting lost during busier...

I can't comment on how the DP-32 compares to a straight to computer setup, but I have no issues whatsoever with the sound quality. I've only done basic vocals with it so far, full band recording starts next week.
