Saffire USB 6 have high Z inputs. I checked around and it has a 2K ohm input for microphone inputs and greater than 10K for line inputs. It should be enough to get a great sounding guitar or vocal recording.

I think you have the required equipments for your portable studio. I would recommend bringing an extra external hard drive for your backup.
