most mid-range mixers and up have direct outs or inserts on each channel, so you can send each channel to its own track on your recorder.
beyond that, your mixer can handle the monitor mix, as well as headphone cues or other submixes. not to mention the final 2-track mixdown.

you can go from an outboard pre into any of the 1/4" inputs on your mixer -- even on the channels that also have a preamp. on most gear, when you see a 1/4" jack, you can be reasonably sure it is for line level signals. XLRs are used in different occasions for both mic level and line level.

those are two headphones of very different strengths. extreme isolation headphones have .... well, lots of isolation. i've been looking to get a pair of those myself.
but i'd put money down that whatever Grados you're looking at would sound FAR better from a pure listening standpoint.
those switches on the behringer are cool, but watch out -- all of those plugs are unbalanced TS.
i have a Neutrik NYS-SPP-L, no problems with it. you switch normalling patterns by removing a front panel and rotating each channel's PCB. don't have to unrack it. they go frequently for $50-60 on ebay.
