I'd rethink those c100's if I were you. I've found some uses for mine (toms. trumpet section) but they sound very harsh on overheads. Probably because they are harsh. Maybe get one of those cheap behringer omnis if you have a good room. Or else a couple of MXL 603's if you have dark cymbals, or...

I installed a second hard drive for a friend of mine, he's on cubase and needed it for extra space and to reduce dropouts when recording etc.
All went well, fomatted the new drive and copied his audio files from one disk to another. Everything was in two folders. Songs...
Just got the Thinline today. I have been playing it through my Twin. In my opinion this guitar sounds better than my 1992 USA Strat, and my 1972 Tele Deluxe (not a reissue).
The neck plays like butter, the low end is round and punchy, the pickup selector switch gives a lovely variety of tone...
You don't need to win the lotto to do a better job than that.
Having said that, it sounds better than my first recordings.
You can go along way further good mic placement, and some more eq and compression knowledge. The drum tracking here especially could use more work.

Buy a 57 second-hand. There's millions around.
You need a new soundcard. You sound like you are using an onboard card or a soundblaster clone. The 'mic in' input has a preamp in it, albeit a shit one.

A mixer has a preamp on very channel, along with eq, insert points, auxillary sends/returns, different routing options etc. A cheap mixer is very useful if:
1: You need a number of preamps to record multiple sources simulteaneously, e.g. a drum kit.

I always thought of the 1604 as a 4-bus, I suppose you could call it two stereo busses though.
Doesn't the amount of individual tracks depend also on the amount of direct out's also ? The Mackie has eight. Along with 2 stereo (or four mono) busses that's more than most people here need...

Lot's of different types. Country tones do play a part although It's not a style I really play (if you know what I mean).
I need something with with a fixed bridge, doesn't need to have hugely hot pickups, I like maple necks, and a nice natural sustain.
There aren't many options locally to try...
