Pretty much any home recording software will do this.
The recorded files will be wav, or some other lossless format.
Conversion to mp3 would be at the export stage so just ensure you select .wav as your format when exporting. (y)

Ordinarily if you panned slowly something from centre to one side it would seem to get quieter.

It seems I was right, but not quite right.
The problem wasn't your choice of setting for the master track output - It was the fact that width was set to zero.
Changing the setting exposed the width control, allowing you to turn it up and solve the issue,

Right click on the pan knob at the top of your master track.
Change pan mode to Dual Pan.
Ensure the sliders are dragged hard left and hard right (they should be already)

You've got everything going through a master track/bus, with centre panning.
I have a ProTools skin on Reaper so I don't know if the layout will be the same for you,
but your master should be panned hard left for left and hard right for right.

I think I get where you were coming from - You don't have discrete left and right channels,
but all of the same information is still there.
It's just stored differently, as sum and difference - I.E. information that's common to left and right on one track, and information that is not stored on...
That's what it is. That's the foundation of mid-side.
The lower your centre mic (or higher the sides) the less natural it will sound.
If the centre mic is brought right down to the point where it's barely contributing, you're literally just hearing opposite polarity signals in each ear.

I tested out your wav files and everything works as it should.
I do notice that when you're at the left hand side (face of the Cad mic) you're nowhere near as strong sounding as when you're at the right/back.
That could just be that you were closer to the mic when you did your right...
The .kext file will be included in the installer.
Just download it then right-click the .pkg and choose "Show Package Contents"
Navigate through that and you should find the kext, probably in a /system/library/extensions structure.
From memory you'll need to put the kext where it goes (/S/L/E)...

I also have a Focusrite Scarlet interface.
I set it as my playback device for all audio and systems sounds,
and my speakers and headphones are connected it.
That way any and all sound coming from the computer goes through monitors and headphones.
Is that not working for you?
There's a number of ways you can go but if backing up is the goal then decide if network access is important,
because that determines whether or not you need to dedicate a whole computer to it.
