    You can try using Slate's VTM (virtual tape machine). Well worth the money for their plugs. I know there are recordists/engineers/producers who do what you want to do, but it seems a bit much with all the really good plugins available. It certainly worth trying rather than monkeying around...

    A waste of time comparing the two songs. Listen to lots of music and find your own voice. Also, the music itself that you're recording will often want to come out a certain way. What does "not bleed out the high-end" mean exactly?

    Yep. Again: just plug the balanced lines into unbalanced jacks. I about guarantee you that the Behringer (I've owned a lot of their mixers) says "bal or unbal" on the jack bay in the unit(s) somewhere.

    That's good. Stick with all that--it's a good place to start. Yes, direct monitoring is the way to go. Oh, and for the money, AT's sister mic of the 2020, the AT 2010, is an excellent microphone to have in your budding collection too. I've got a few of them.
