VST Connections is not where you select Mono or Stereo. You would do that when you create a track on the timeline.

Okay, here are some screenshots....
Create two midi tracks
Add two VSTi's I used Ezdrummer and an Ensoniq SQ8
Assign each midi track to a VSTi
Press Record on both midi tracks...
Voila....
