The instrumental is a cover of David Wilcox's Bach instrumental, which he tacked onto the back of one of his tunes on a 1992 album. It's in a weird tuning, AEC#AEC# low to high, capo'd 4th fret, which is actually F# on my longscale.
Right now I have an Ovation longscale guitar. I use an MXL990 and ADM170 in stereo configuration, into Tascam US-800 audio interface, into a dell desktop with Cakewalk's Home Studio Seven software. I'm not getting that bright, natural acoustic sound, but it may be the room more than anything...
