Are you recording on all 16 channels of you mixer at once? If not, I would use the track outs. If you need all 16 channels, then I would submix the drums to a pair of buses and probably direct everything else.

I just saw on eBay that Sony makes an MD DATA2 that is 640MB. Does anyone know if these will work with MiniDisc units like the Yamaha MD8?

Well, you could bounce them to a computer 2 tracks at a time and then bounce them back with the disc set to 8 track.
