Simple Software?

I've been reading around looking to choose a software. I see a lot about Cubase, Cool Edit Pro, Reaper, etc.

I plan on recording guitar and vocals, and some day soon move onto full tracks with percussion and bass, maybe some horns...
I don't want to use any (...how do i say this) "fake instruments?". I'll just record direct input from an instrument or microphone for all my sounds.

So my question is:

What is a easy to use, SIMPLE, software?

- - I want to be able to edit/mix of course. But in no way, shape, or form, am i looking for a software with 6,000 gadgets and whistles.

P.S. It says "Simple Software" not "Simplest". I already have Audacity xD
 
Mixcraft is very intuitive, good program, and very reasonably priced. Reaper is a very good program, also reasonably priced.

I agree. The only comment I would make is that Mixcraft is Windows based only. It also has a couple of nice plugins.
