I like mine cooked a little more than that, but not much. I grill them very hot and very quick. Nice crusty char on the outside, soft and pink in the middle. Kind of like an old hooker's lady parts.
I use a cast iron pan over a very hot stove. I've always preferred that taste over a grilled steak. The fancy places surely aren't grilling your steaks though my stove doesn't get as hot as theirs.
If that wasn't a sirloin it'd be a lot better looking. Either way, the grill is the way to go.

that sounds good. i was in NOLA over the weekend for a wedding. no luck finding a good hole-in-the-wall shrimp/chicken joint, so I had to settle for Popeye's (which we actually have in Detroit anyway)
Duuuuuuuude. All you had to do was ask in Prime Time. There are a bunch of people who could have recommended something. That is a missed opportunity. Big time.
