so basically if I can find any mixer with inserts, I could use them as direct outputs?

I believe all inserts are after the preamp so, I guess you could. I've even heard of people using the out of the insert for tape send and the return for tape monitor. I'm not sure as I've never done it but it seems right to me.

Yes, you can do this. I use the insert sends from my Mackie CR1604-VLZ to my soundcard on practically everything I record. Keep in mind that the EQ section and faders will be defeated with this method (as far as what is sent to the soundcard). Thats precisely the reason I go this route... I have much better software EQs than what's built-in to the Mackie, and I'd rather bypass everything except the preamps on the mixer.
