Long story short, I need an XLR (from phantom power box) to either 3.5mm or USB to plug into my computer. The 3.5mm would need a splitter on the computer end since its a dual jack and doesn't recognize the XLR to 3.5mm cord I have (My camera does). Which would be my better option as far as sound quality and/or interference, XLR to USB, or XLR to 3.5mm + 3.5mm splitter?

To get from XLR to USB requires analog to digital conversion. There are simple converters-in-a-cable, but usually a better option is a proper audio interface.
