Stereo recording......mono playback.

I have 2 Studio Pojects B1 condenser mics. I'm 100% happy with the recorded tone I get using them. I record my live singing/instrument accompaniment in stereo using both mics at once.
What's the best mic positioning for me, that will provide good stereo sound yet at the same time still sound very good if played back in mono? Thanks.

If it was me, I'd either record the guitar in conventional stereo with your two B1's, then overdub the vocal on a third track with one of your B1's, or try to get the best conventional X-Y stereo mic'ing in a room with great acoustics and capture your vocal and acoustic live in stereo.
