Can anyone tell me what the sensitivity formula mV/Pa means, and how do I use it when I'm researching microphones.

It means how much output will appear at the connector end of the mic (in milliVolts) when 1 Pascal (about 94 dB SPL) of sound pressure is applied to the other end of the microphone (the diaphragm). I'll be covering all that "spec" stuff in the "big thread", once we get the last of the drum miking questions out of the way.
