recording and burning piano tunes

I'm recording solo piano pieces from my xv-88 into cakewalk in 24/96. I've got the mixes sounding the way I want, but when I change the format to 16 bit, mix down and then try to burn to cd, you can hear a distinct sort of high rattle-like sound accompanying each hammer strike. It's not there in the original mix. Does anyone know how to get rid of this? Would it help if I recorded at 44.1 instead of 96? By the way, what is dithering anyway when you go from 24 bit to 16 bit? So far I do dither when I do it, whatever that means.
