what are the names to the diffrent parts of recording?
this is what I "think" there called.. am I correct? or am I mistaken?

setting up mics = engineering
setting levels on all the tracks
adding EQ/compression, ect = Tracking
final brush-up/exporting = mastering
keeping an eye out over the whole process = producing

are there parts I missed? wrongly named? ect.
 
I'd call setting up mics 'mic placement'

Setting levels on the tracks 'gain staging' or 'monitoring' or 'mixing' depending on which levels you're talking about.

'Tracking' is the process of recording tracks in a project.

Adding EQ and compression is part of the mixing process,

An 'audio engineer' is someone who knows (or thinks he does :D ) how to set up mics, mix, master, etc. 'Engineering' is the process of doing all that. All the technical stuff including mic placement, gain staging, tracking, mixing, mastering, etc..

Never had a producer, but imo the 'Producer' is more of a visionary, working with/for the band, he'll tell the engineer what he wants done, offer ideas about how to arrange tracks, what he wants the fades to sound like, what/how much fx to use, etc. The producer thinks it up, the engineer actually does it.

I'm pretty sure experienced engineers with years of experience would take exception to that, with extreme prejudice. I don't think all Alan Parsons did on "Abbey Road" and "Dark Side of the Moon" was just "set up mics".
