Mono, stereo, +/- ???

Is there any advantages to recording in stereo over mono when using just one mic? In other words, i'm now just using one input to my sound card and recording to the left channel only. However, is there any advantages to splitting up this input into the soundcard using a Y cable so both channels can be recorded in both left and right channel? I use cooledit pro v2, 2496 sound card, one sm57 mic.

You cannot record in stereo from one mic. Some software might record a stereo track with a copy of the mono signal on each track, but it's silly, it just uses twice the data.

When you have a bunch of (typically) mono tracks recorded, you place them in the stero spectrum by panning them left, right, or in between. That's part of mixing to a stereo master.
