let's see now for the guitar mostly electric and sometimes a classic

both clean and overdrive

no pre amps

Don't worry. Any way you mentioned will do :) I do most of my work straight guitar--> effect (drive thingee when necessary)--> mixer -->soundcard. Some time I put insert (comp/eq) on the mixer. The point is how happy you are with the character you achieve, and how good you are dealing with headroom (capture the audio without noises). Since I do so many time editing with computer, I didn't have much trouble on achieving what I'm looking for. Some people likes to mic the amp to capture the character. It deppends on your taste. For acoustic guitar, use condenser mic (unless you have certain reason to use pickup). You'll be happy with the result.

For every way you do, you better have one... at least the one bundled with your external small mixer...

i would use a nice condenser for the classical guitar, and a simple dynamic for the electric (mic the amp as mentioned).
