instrument cables mono stereo?

when recording guitar directly from them amp into the interface(jack to jack) does it matter if i use mono cables or stereo?
 
It will depend of whether the line output of the amp and the line input of the interface is balanced or not. If they are BOTH balanced, then you will want to use what you are calling a stereo cable. If either one of them are not balanced, use just a normal instrument cable.

Technically, a cable is not stereo or mono, the signal it is carrying is. A 'stereo' cable can carry a balanced mono signal, two unbalanced mono signals or a stereo signal depending on what you plug it into. You can't always assume what type of signal you have just by the type of cable or the type of connectors that are being used.

If, by chance, you are trying to connect the speaker output of your amp to your interface, have a fire extinguisher handy. It's going to get ugly.
