Im tryin to get a very solid acoustic guitar recording. Im using a pair of samson co2 mics into a 001 inferface. Im in a fairly small room. My problem is the guitar always seems distant. Like in pro recordings the guitar is very punchy and prominent. How do they do that?

you probably need to be closer with the mics.
How are you positioning them?

Compress the guitar signal, highpass filter, boost around 8khz, scoop mids just a tad, boost a bit of low end (maybe 120hz?) add a tad of hall reverb. Standard "add presence" measures.

Recording in a small, untreated room will cause a lot of issues.
