Best way to record a steel tongue drum

Never done it, but it seems like a simple cardioid condenser with proper positioning (may take a little trial-and-error) would capture it pretty nicely and evenly.

I think with any odd/uncommon sound source...go old-school as a starting point. While the sound source is playing walk around and/or move your head around, until you find a spot where it sounds best to you, and then put a mic there amied at the source.
Then from there you can fine-tune the setup and try different mics...or put up additional mics.

Do you think it would be a good idea to use two condenser, on on either side, to make a stereo recording?

Why not try it? Would be simple to try a few of these methods and choose which sounds best, keeping in mind how it will fit into the final mix.
