"Best" MIDI program

I currently use either Power Tab Editor or Guitar Pro to arrange/transcribe my songs before I record them.

I also use them to export a piece as a MIDI file which I then run through a VSTi and into a WAV file.

I do this for piano pieces, synths, or drums, since I don't own a piano or a drumkit.

My question is, what is the best program to use that works with MIDI files, for changing dynamics like velocity, volume, pan, etc.?

I guess I could do it with those programs but that takes hours and it usually doesn't sound very realistic because it doesn't take advantage of all MIDI features.
 
On the PC, the orginal midi sequencer: Cubase
On the Mac: Logic pro

I have been a cubase user forever and it can take any midi task you can throw at it. It goes DEEP into midi if you need to go that far (sysex string building that will exceed any hardware spec for example with checksums) and nice features such as GM midi file import which splits the file by instrument and so forth. Will also record and automate CC's/SYSEX/RPN/NRPN
