I just acquired a large condensor multi-pattern microphone.
It has cardoid, figure eight, and omni-direction modes. It also has dual matching capsules. Sounds cool but could anyone
give me examples of when to apply different patterns? Any
helpful hints are appreciated. Thanks in advance!

you should get a copy of "Professional Microphone Techniques" by Huber and Williams. this book has a plethera of different micing techniques. pretty good book.

here's a couple:

omni - can be used for ambience or backing vocals with mutliple singers

figure of 8 - can be used for MS (mic-side) Stereo Micing with the addition of a Cardioid Mic.

I've been pointing mine bullet-like down toward the sound hole of my acoustic from slightly above, about one foot away, using figure 8 pattern. This way one of the figure 8 loops picks up the highs and the overtones from the fretboard and the other loop picks up the woody sound from the bridge and body, and I don't get that overly boomy sound you normally get from pointing a mic directly at the sound hole.
