Grilling Tri Tips, fillets, and salmon, and making sashimi and maki rolls. None of that mesquite bullshit. Two kegs per night. It is on like donkey kong.

We went to a venue one time where the ratio of food flavor to smoke flavor was 90/10 in favor of smoke. It was awful, can I get a witness?

We will use charcoal, I reckon. In any case, the point I am making is that the food should be on the flavor spectrum between edible and great.
