No. You do not need a mixing console to make it sound "good". I use a mixing console for the preamps to run into my interface, and then also back in for monitoring.
By the sounds of it, what you're talking about is more or less a soundcard related issue. What soundcard are you currently using?

Sure, that will work. Obviously you have to really focus getting the levels right on the mixer prior to recording the tracks, especially with drums.
