If I wrote a song and made a demo that I then upload onto soundcloud or YouTube, can it still be sold? Or does it have to be "unpublished"?
So let's say I upload the song to Youtube or soundcloud and it got thousands of hits. Maybe millions.:P Then I decide to try and pitch it to some artist...

For example, personally I first make some sort of instrumental using drums, base, and pads.. Then I listen and naturally a melody forms in my head...along with lyrics usually.
Then after I get an idea of where I'm going I start to shape...

Yes, a good (most like very expensive) mic will offer great sound quality.
However, no all of us can afford to buy a 1k+ mic.
