Any of the channels 1 to 10 can be individual, as well as the pairs I mentioned
I don't use Cubase, but I have a little trick with Mono-to-Stereo. Use a Stereo Widener VST, makes you guitar or vocals sound huge. Adjust the "delay", the higher the setting, the "more wide" and stereo-like. And you can still Pan the track, and have this widener "bleed" into stereo
