Quick question - locking the track?

Lock.../Unlock
If you want to make sure you don't edit or move an event by accident, you can lock the selected event(s).

You freeze effects virtual instruments. What version of Cubase are you using? In SX there's a freeze button next to each virtual instrument slot.
 
You can freeze an audio track as well. All the plugins get applied to the track (but not permanently- it creates a new audio file) . this frees up your cpu - or your UAD-1 cards if you are so inclined.

It's in the help section of the program.
