I'm having a tough time finding out exactly where/how to reverse the phase in Adobe Audition... can anyone help? I see "invert" is this the same as reversing the phase?

Yes, the invert command will reverse the phase. Also on the mixer there is a button that looks like a zero with a back slash drawn through it.

You should only need to reverse the phase of a track if it conflicts with another very similar track and causes thin sound or cancellation. Such as two mics on the same instrument but pointing in different directions. Listen to the two tracks together while A/B'ing the phase off and on to determine the best mode.

Definately a useful too for drums with multiple mics. I just recently had a "duh" moment realizing that the kick sounds way tighter and jives with the OHs much better if the wav's inverted. Same, or course, if you are micing the bottom of the snare. Otherwise, I can't see it being much use - maybe if you are micing the back of a guitar cab, which I've never tried. Maybe I will for the next guitar track I work on - just for fun.

Yes, it was to correct issues with double mic'ing the snare, and double Mic'ing the kick with a subkick and a shure 52. Nice to know about the circle with the backslash. Thanks guys.

I also found this thread addressing the same problem.
