one channel and two channel........

I know this sounds pretty newbie, but if I just want a mic pre for vocals, is a one channel pre enough?

since vocals is all you will be doing than yes 1 is enough.
but i would try to go for 2 if you can afford it.

One channel is enough. Often, people will go for a channel strip that includes a single mic pre, a compressor, and eq (such as the Meek VC1Q or VC6Q or the Mindprint Envoice or the Presonus VXP or the ART Pro Channel or the Focusrite Voicemaster). These units give you a lot of flexibility for shaping/controlling your sound.
