Cooking With Seeker

Neighbor came over for libations and smoke and ended up grilling the chicken breasts while lightly raining but the chimichurri came together nicely in a pan.

If you have a food processor (which I don’t atm so this is very intensive hand prep) this will take no time at all. Healthy and delicious but don’t plan to kiss anyone for 12 hours or so after eating. And vampires won’t come within 2 meters of you!
I once ate a whole ball of raw garlic in 10 minutes on a $20 bet. My buddy was so pissed I came through on the dare, he gave me $20 worth of nickels. Needless to say, I reeked of garlic for the next three days.
 
The butter is a nice addition.

Went to spend the night with a friend when we were kids. His mother made grilled peanut butter sandwiches. Butter, why would you need butter when it already has peanut butter. Basically peanut butter on toast, light on the peanut butter. Damn choke sammich. Good thing she served it with soup....split pea soup. I always thought maybe she didn't much care for me. After that lunch I was certain. Mrs Robertson, she was a..... temperamental lady.

What's for dinner tomorrow?

I have chicken leg quarters marinating in a sort of teriyaki sauce for the grill tomorrow. I was thinking maybe Jerk, but the ol' lady made pot stickers and made way too much dipping sauce. Double duty, marinate. Pork ribs are currently on sale, I may low and slow a rack while busy working in the garden and other chores, throw the chicken on after ribs are done. Roast some fresh Brussels sprouts I picked up. To cool off from the sun a little caprese salad for openers, maybe lunch.

Nothing extravagant tonight but cooking some animal meat on the grill. Cow cutlets and filleted chickens breasts. Dinner tonight and maybe tomorrow IMG_1172.jpeg

I didn’t eat much of it so I have lunch today, dinner tonight and maybe lunch tomorrow. I left the steak medallions fairly raw so they won’t be over cooked after a good microwave heating.
 
Last night was pork tenderloins. I applied a bit of rub that I make, let them sit for about 40 minutes, then tossed them into the oven for around 25 minutes at 350. Some green beans and a potato in the microwave for about 7 minutes finished it off. Yeah, it got the kitchen a bit warm, and with outside temps at 96, it make the AC work a bit more but I like a nice tenderloin. I'll have dinner for several more days.

I think for the weekend, the rest of the cooking will either be on the grill or I'll fire up the smoker. Or I'll just stop by a local bar and grill and grab a bite.
 
I made some chicken breasts pan-fried in garlic and olive oil last night and some homemade creamed spinach but didn’t take pics. It was good, though. 😋
 
My brother is currently working in up in Maryland. Home for the weekend he's dropping by some Blue Crabs. They'll be already cooked, but that's fine. Been a while since I picked crabs. Got some good brand hush puppies as long as you don't over cook them, beer and dermater juice, a little pile of Old Bay seasoning, melted butter for the wife. Life is good.
 
I’ve been trying to cut down on sugar so flavored seltzer water instead of Gatorade, sweet candy or ice cream on occasion but not daily, but last night had a sweet craving so put a slice of Colby Jack cheese in a pan, put goat cheese on top of that then drizzled with honey and it was delicious.
 
Publix supermarket is a southeastern, employee-owned chain and I dig that. But I believe they mislabel or misplace items on shelves purposefully. Usually I don’t do self checkout because usually there is a bottle of Pinot Noir in my groceries that requires identification and is IMO easier just to find a standard checkout line.

Today was not that case and did self checkout and scanned Horner lunch meat 14oz pack at $3/10. Had a lady there watching me to assist at a low volume time of day. It range as $8.25. The label under the sale price was only $5.89. I asked the lady to remove the item and she did the wanted to confirm I was blind or stupid so went back to double check the 3/$10 and brought a new pack of Hormel smoked Turkey breast to the scanner and same price of $8.25. I had photo’s the price and display and she called someone to escort me to the aisle, witnessed the price and we went to my register and scaled it and came up as $8.25 again. I also pointed out that the regular non-sale price tag underneath lists the item as $5.89. I got it for free but I’ve had similar situations with Publix. Sucks I have to verify prices but it is a thing ☹️
 
I went to the grocery to buy basic things so Ima share a Seeker debate appetizer/dinner dish with pics as it evolves. I have tortilla chips, some lunch meat, some cheese and sour cream and that should be enough for proper Pres debate meal.
 
Simple as pie and this is what I’m starting with…some fresh parsley and cilantro, a bulb of garlic (which I’ll only use a few bulbs), and some everyday lunch meat (ham in this case because I bought it on sale last week and need to use it)

I’m winging this with ingredients I have which are so far a little fresh minced parsley, fresh minced Cilantro, fresh minced garlic. This is what it looks like.
