My philosophy:
1) Buy used BUT know what you are buying (and from who) and what are the risks of buying used. Google for typic failures, how much would fixing cost, make sure how to spot a fakes, read forums, manuals, user reviews, watch videos. Go rent the piece before you buy it.
2) Don't buy...
I wouldn't go with variable bit rates because some players (hardware) don't know how to play them.
As for bit rate I don't think 320kbps files are too big.
1) TL audio output to Delta input 1
2) Delta output 1&2 to Yamaha stereo input (15/16 for example). Don't eq on mixer!
3) Yamaha output to sub inputs.
4) Sub ouputs to 1029A inputs.
5) Turn up the volume slowly and find good levels, tweak sub and sattelites.

I belive that Steinberg interface has good pre's for now, have heard great things about these. First thing looking at the picture I would buy a mic stand and a condenser for capturing that guitar. ;) Oh and proper monitors for sure!
I would not use compressors and the behri (in fact I would sell it) when recording, but would insert it later when mixing. Cubase has a neat system for inserting outboard gear, take a look at this link (or google "external fx with cubase"):

In my experience you can not record stereo mix with external sound card attached. I have tried many interfaces and none of them worked for that. There would be workaround: connecting interface stereo output to inputs, but those Alesis franken-interface-monitors don't have any outputs.. so... :P
You might consider looking into used equipment because for 200 new you will get only a mic or interface. Not both.
For interfaces I personally like Focusrite stuff (firewire Saffire range. Haven't tested out the new Scarlett range, but seems okay), but check out also Edirol/Roland and Steinberg...
Too big? Maybe, but they perform better at lower frequencies than smaller sized speakers. Too loud? Turn down the volume then. :D
You could look into HS50's... they were on sale, maybe still on sale. :)

I'm also working with Cubase and FL. However you could check out Reaper instead of Cubase. It's free (or really cheap, if you are distracted by nag screen at start). I don't know if they make Reaper for Mac though...
I wouldn't record to external drive - somebody accidentally pulls the connection wire or power out, drive connection could just drop off, whatever... just seems unreliable.
Now I'm right now in the middle of building my workstation and there are going to be 5 drives: one for system, programs...

Do you feel you are missing something? What headphones are you using?
I would look into dynamic mic (shure sm57, audix i5, heil pr20) or get the monitors (no clue about your budget, but don't look under 300€/pair. Take a look at Yamaha and KRK for example).
Do you already have audio interface? Yes? Good! No? How do you get the signal to the computer?
I belive there is no point buying a pre when you don't have interface.

Seems, that the problem is in the mic connector, go get it fixed. And yes, all pins all necessary. How did you manage to break the connector (Yeah, sure, it's Behringer, but still :D)?
To make sure you could test with another condenser mic.
