Rarely are vocals recorded in stereo. Just record it in mono and pan it accordingly. Applying a bit of stereo reverb or delay after the track is recorded will give it more depth/image, also.
Unless you are using a stereo microphone (or two microphones in a stereo pair), you won't get a stereo signal. What are you recording that you need to be in stereo?
The simplest way, imo, would be to split the file into pieces and drag the parts you want compressed to a separate track and apply the compressor only to that track. Automation would work, too, but would probably take longer to set up properly.
Absolutely nothing wrong with the VTB-1 SM7B combo, imo. I, too, would suggest backing off on the tube blend (I almost never dial any in), but that mic and pre work just fine together. The insert point (for your favorite compressor) and variable input impedance offer some additional versatility...
Well, the brand is Bushman. Definitely looks bigger than a soprano (the standard, but very small size). Probably the Bushman Jenny Concert or Tenor.
Edit: Yep, Bushman Jenny Concert:

I say 2020 about 2-3 feet above the snare, angled slightly toward the middle tom. Whichever dynamic sounds better on the kick, use it there. That will get you a decent sound to start with. If you feel like you need more of something (snare/hat/ride), stick the other dynamic on it.
A different mic will probably do more than a preamp to "warm up" your sound. Both the NT1 and 990 are very bright sounding mics. Look into a ribbon mic and pair it with a nice clean preamp (like the Rane MS-1b)
As for "warm" preamps, I think the Groove Tubes Brick is pretty tasty. Not my first...
Of your list, I don't think the NT1 is a terrible choice. Sure, it's bright, but that's not always a bad thing for a baritone. It is detailed and quiet, but sometimes overly sibilant.
The total opposite choice would be the Shure SM7B. It will cost you around $300, or so. None of the 'exciting...
Thanks for your thoughts. The primary project is a low-budget camcorder piece. Both indoor and outdoor recording. I'd probably need something battery powered, or that could run off the mic in on the camcorder (a Sony).
Anyone tried them? I'm going to be doing some video work shortly and thought one of these might come in handy. Also, what would/could I use these for in the music recording setting?

I have an old beater that I want to mod to put a single P90 in (currently has a DiMarzio Fast Track). Are the P90's from Guitar Fetish any good for the price? Other suggestions?

The CAD is more versatile, imo, as it is not as bright as the Rode. The brightness of the NT1 is more love-it or hate-it. Good for some voices (deep male, or breathy/whispery female), but I haven't found anything else I like it on.
