I want to find the name of the FX or a technique I can use for mixing my guitar. There is a section I am going to write where I want the guitar to do a quick little melody that alternates every 1 or 2 notes between left and right pan. Is there an easy way to do this or physically panning two tracks left and right at the specific notes?

Yes. You are looking for a stereo tremolo. You want to pan it hard left and right, and tempo synched.
Depending on how you play, that should give you the desired effect. However, if you don't want it locked at a particular tempo you'll have to do it the hard way.
A manual workaround would be to just play two guitar tracks (or multiples if you're doubling etc.) and syncopate the notes.
