This doesn't really answer your question but you can get a cool scoring program from http://www.musicease.com/ (shareware/evaluation) that is really easy to use. Kinda like a word processor for music. Then you can save as a midi file and import into cakewalk etc.

Multiple staffs etc. are really easy and you can print good hardcopy too.
 
Does anyone out there know how I can get two treble staffs and a bass clef in order to write a song with the piano and voice in either Cakewalk or Logic Audio Silver? Thanks!
 
In Cakewalk, you do it in Staff Layout. Choose the treble/bass layout for the piano and just the treble for the vox.

Note: you can't have a stave that consists of 2 trebles and a bass clef. You'll have to select both tracks at once and then bring up the Staff view. Then you'll see the staves for both tracks, one under the other.
