In the video the mics for both clips are spaced. If you like the ultra ambient sound then try AB in the traditional format where spacing is very wide in your location perhaps 3m away but say 6m apart. Try mono and cardioid. This was a technique used in stereo’s early Days and was artificially wide and HUGE sounding. Wide spaced techniques worked well for big band recordings for example where the music style works well separated out. Personally 3 channels works pretty well. One, the focus instrument and the others a more distant space pair and balance for taste later, not during the recording.
