Help and advice needed please

I have my recording equipment from the early 2000s when my (non-musical) career took over and so I haven't done any playing or recording since then.
Now I'm in the position of being able to get back to it, and I would appreciate some help in determining if it's going to do what I need it to do going forward.
I want to use it to record some song demos - basically to use as a musical notebook - maybe do a couple of YouTube instructional videos etc.
I'm a guitar player and have guitars and amps that I know are good.
I can take a line out from the amp to the recorder or mic up the cabinet, or use a mic for acoustic guitar.
As a main sound source for drums, bass and keyboards, strings etc, I have a Yamaha Motif 6 from 2001.
I have a 2001 Echo Mona 24/96 as an input for mics and the Yamaha, but Echo no longer supports this unit.
Will I still be able to use it with Windows 10?

I have a four mics - two I used for live (SM58 and SM57) and for recording an Audio Technica 4033a and an AKG C 1000 S.

I also have a couple of digital delays - bought new in the late 1990s (as I recall):
A Roland SRV 2000 and a Korg Sampling Delay, the SDD 2000.

Any feedback would be much appreciated.
