I'm with PapaNate here. The second one sounds like the digital mix. The first one sounds like the upper frequencies are down, which gives the impression of lots more bottom if you get the volumes more equal. That makes it sound warm and fat. and everyone knows that warm and fat is the way...
I can't say what most people are doing, but I simply use a dry feed to my headphones when recording vocals. No reverb, or compression. If I can get a track that sounds right straight in, the I can use the tools to fill it out, add reverb, etc.

I put ZERO value on how it sounds on a phone, and almost as little on the sound through puny laptop speakers. Phone speakers have no low frequency. While it's amazing that they get as much sound as they do, it's is not quality sound.

It really shouldn't make a difference. The coils are going to be the essentially the same, the polarity is reversed and the magnets are flipped.
Occasionally humbuckers can have unbalanced coils, so it might make a small difference whether the dominant coil is placed closer to the bridge...
I'm guessing you need to lock on to the knurled brass piece with something like pliers, and then turn the shock mount. You don't want to apply the pressure through the boom arm. Remember the old adage.... righty tighty, lefty loosey.
