...how to remove the 'snap to grid' function on the playhead in logic? I'd like to place the playhead between grid lines at times, and can't figure out how.

I did figure out that if you select a region and hit space return, it automatically sets the playhead at the beginning of that section, even if it's not on a grid line.
 
I always just keep zooming in until the lines are where I want them - I'm sure there's a better way
 
Just try messing around with the different 'Snap' options in the top right, there should be one there to what you want. Are you recording to the metronome? This can help a lot with having everything lined up nicely :)
 
Logic will always "snap" to the grid boundaries, but you can nudge a region by selecting it while holding alt and shift.
