Do you record in stereo or mono tracks?

Is there any advantages to recording in stereo over mono when using just one mic? In other words, i'm now just using one input to my sound card and recording to the left channel only. However, is there any advantages to splitting up this input into the soundcard using a Y cable so both channels can be recorded in both left and right channel?

None, except for using more hard drive space. Record into Multitrack View: then if you decide you want something on CD, you can mix it down to a stereo track in Edit View.
 
I record almost everything in mono. The one exception would be when I'm recording guitar tracks with stereo reverb or delay through an outboard unit of some kind.
 
Same here. Vox mono and acoustic guitar stereo. If you want a good acoustic sound Taylor214, try recording with two small diaphragm condensor mics. One pointing at 12th fret, the other over right shoulder (if right handed)pointing down at soundhole..but watchout for phase problems.
