Recording Project: Microphones?

Hey guys, I'm working on a school project for recording solo and ensemble groups. What brand and type of stereo matched pair microphones would be best for working with instrumental groups? Also a 2 channel or 8 channel interface? Preferably not breaking my budget! Thanks!
 
I have been using KSM137s for school concert band recording and really like them. I use a 2 channel Focusrite interface. I recently purchased on Naiant Omni's which I want to incorporate into my recordings, so I will need to switch switch to a 6 channel Tascam interface.

I have a telescoping mic stand that goes up to 15 feet. I place it behind and over the conductor's head. I set the mics up in a regular ol' ORTF pattern. Once I start using the Naiants, I will place them out to the far Left and Right of the band; I think... not sure yet. I'm going to have to research and experiment a bit.
