I love the Neve V51 mic pre - it sounds amazing! And I have 60 of them...
It sounds great with every mic and I love the way it records vocals with the SE Gemini II.

I suppose the strangest mic technique is using the mobile phone's mic to record stuff, but I'm sure everyone is doing that these days.

I always keep the level as quiet as possible, I can hear more details as my ears become more sensitive at low spl and I want to keep them in good shape

Hmmm tried to find a Neve V51 pre online, but couldn't dig up much info about it or even find one for sale! Must be a classic!

I find it interesting and encouraging that you mix at low levels. Most pro producers/engineers (from what I've seen) tend to mix/master at quite loud volumes. Bobby Ownsinski, who also stopped by here for a Q&A a few months ago, said he usually mixes at 90+db SPL. It's nice to hear that there is no set method for that stuff :)
