Best way to multi track a live recording with limited gear?

Hi all,

I'm looking at trying to put out some live stuff in the relatively near future & I was just looking for some advice on the best way to multi-track a live solo 'acoustic' recording.

I'm playing small venues & mixing live on a Yamaha EMX 5016CF & I'm looking to get separate acoustic guitar, vocal & stompbox (the percussion device rather than an FX pedal) signals into my interface. Is there anything to stop me sending say, a vocal to aux1, guitar to aux2 & the stompbox to an effect send & doing it that way?
 
That is the perfect and most straight forward way of doing it.

For the most part, all the outputs (and line inputs for that matter) on a mixer are equal. The only difference is the routing possibilities. So any way you can route a signal to an output is a valid way of sending it to a recorder.
