Real basic: Getting a 2 channel mix

Pardon my ignorance, but how do I mix a single track recording so that the sound will come out of both speakers?

It should come out of both speakers unless you have it panned all the way in one direction. Even a mono recording should be heard in both speakers. It won't be "stereo" but will be heard in both speakers.
