Question Electrical Engineering midi thesis

I'm in Electrical Engineering undergradute and I'm thinking of doing my thesis on MIDI.

I'm interested in analog to digital coversion (converting guitar signal to midi notes). Where can I find good resources on this topic?

Surely you realize that converting a digitized guitar signal to a MIDI note is not a process of analog-to-digital conversion? You have to process the signal to deduce its pitch. It's often termed pitch-to-MIDI conversion.
