Two separate tracks with one input sound?

I am using Sonar to record a small project at my church

I would like to record the vocalists alone, but without experience they would prefer to record their parts in pairs. Each one will use their own mic into a separate channel of a Mackie board

Can I take an insert from each of the two channels, use an adapted to convert the two 1/4 mono jacks to a 1/8 stereo jack (the line in to my Extigy), and then arm two tracks - setting inputs to one left and one right?

Other than the slight ambient bleed between the mics, will this work? I know it is not ideal, but just looking to solve a problem as best I can.
