can workstations such as a Kurzweil k2000 simulate a piano. For instance, can I play the keyboard as if it is an actual piano?

Probably. But you'll have to try it youself to see if it's a simulation you like. There are lots of great simulations out there.

Some workstations have 88 note, weighted action, touch sensitive keyboards with a sustain pedal. Just like a real piano.

If you are asking about the K2000 specificly then the touch is not like a piano and it doesn't have 88 keys.
You would need the k2500 88 keys or the k2600 88 keys for that.

No synth is going to be like a piano touch but some come very close !.

I'm not the keyboard guy ... but I have a K2500 and it doesn't have weighted keys ... so it's not like a piano. Some nice sounds on it though. My bro has an Alesis Q8 which is 88key and weighted and he likes very much. I prefer the piano sound from the Q8 over the K2500, but that could be partially due to how he plays it because of the weighted keys.

Bigkahuna
The k2500 comes in several options and one of them is a weighted version 88 key's.

The K2500 has a set of ROm of 4MB of piano sounds that kick ass.
It is a minimal cost as a extra and many dealers throw it in as a extra for free.

You best bet for a perfect piano sound would be to use samples ans not onboard sounds.
