when setting up track set it up to record in mono

in edit window [cntrl + enter] first introduces a screen where you set sample frequency, bit rate and whether you record in stereo or mono

in multi track (and do not have CEP installed on this machine so label might be wrong) on the left had side of the track there is a button, 'r' I think that you left click to arm right click to set properties, once in that option box settings should be obvious, bit rate, A/D source and whether to record stereo or mono

once properties a track are set you can not change them (you can convert in edit mode from stereo to mono, mono to stereo so for any already recorded track simple convert to mono, 100% left 0% right)
