Unhappy

Well, i have cubasisVST. and i was wondering, whats the difference between recording mono and stereo?? Wich one is better?? How do i use vst instruments, do i need a keyboard?? If you can answer one of these questions even, please do. I just wish i knew good features to mix my cubasis recordings rather then just putting parts in places. Thats all i really know how to do. If theres away i can ajust volume in different parts, that would be really neat. Please help if you can.
